- 1 c
- mixed shredded cheeses of choice
- chopped green onion
- salt and pepper
- beaten eggs
- seasoned flour
- parmesan cheese
How to Make LEFTOVER MASHED POTATO PUFFS
- 1Mix Potatoes, egg, cheeses, onion, salt and pepper to taste.
Refrigerate to set about a half hour
- 2Roll potatoes into small log shapes about two inches long
- 3Roll logs into flour, then beaten egg, then breadcrumbs mixed with parmesan cheese.
Can be fried in oil immediately, or refrigerate again to set about a half an hour to ensure a crispy crust.
Fry in 1/4 inch of oil heated to 350 degrees until golden brown and crispy.
