- - leftover mashed potatoes
- 1 - egg
- 1 cup mixed shredded cheeses of choice
- - chopped green onion
- - salt and pepper
- 2 - beaten eggs
- - seasoned flour
- - breadcrumbs
- - parmesan cheese
How To Make leftover mashed potato puffs

Step 1Mix Potatoes, egg, cheeses, onion, salt and pepper to taste. Refrigerate to set about a half hour

Step 2Roll potatoes into small log shapes about two inches long

Step 3Roll logs into flour, then beaten egg, then breadcrumbs mixed with parmesan cheese. Can be fried in oil immediately, or refrigerate again to set about a half an hour to ensure a crispy crust. Fry in 1/4 inch of oil heated to 350 degrees until golden brown and crispy.
