This is a delicious way to use leftover mashed potatoes! Can be served for breakfast, lunch dinner, or a snack!

Ingredients

leftover mashed potatoes
1
egg
1 c
mixed shredded cheeses of choice
chopped green onion
salt and pepper
2
beaten eggs
seasoned flour
breadcrumbs
parmesan cheese

How to Make LEFTOVER MASHED POTATO PUFFS

Step-by-Step

  • 1Mix Potatoes, egg, cheeses, onion, salt and pepper to taste.

    Refrigerate to set about a half hour
  • 2Roll potatoes into small log shapes about two inches long
  • 3Roll logs into flour, then beaten egg, then breadcrumbs mixed with parmesan cheese.

    Can be fried in oil immediately, or refrigerate again to set about a half an hour to ensure a crispy crust.

    Fry in 1/4 inch of oil heated to 350 degrees until golden brown and crispy.
