Grandma liked to use up the leftovers!
Always believed waste not, want not!
This recipe is one that all ages will like.
You start with a baked potato, then in a few minutes end up with a dish ..to die for!
Potatoes are well done, crispy, and very flavorful.
If for breakfast, bacon & eggs go well to serve family.
Pssst,any leftover can be use to make a tater soup!.
Problem is, never any leftovers!

Ingredients

Add to Grocery List

  • 4 medium
    baked potatoes (not to soft) .. from day before...or microwave 4 if you are in a hurry.
  • -----
    olive oil....as neded
  • 1/2-3/4 c
    chopped finely.....yellow onion
  • ------- pinch
    garlic powder....optional
  • ------- pinch
    black pepper, salt, paprika,dried parsley.

How to Make LEFTOVER BAKERS for CRISPY STOVE TOP FRIED TATERS

Step-by-Step

  1. Peel and dice a yellow onion.
  2. In a skillet, sauté the onion in olive oil,
    on medium heat.
  3. Peel and cut up the baked potatoes
    (not to soft) into 1/2 to 1 inch cubes.
    Please not to rough!
  4. Now add the onions, potatoes and spices
    Pour in a couple tablespoons of olive oil.
    Add your seasonings, you can add some herbs or spices of your choice.
    Put a lid on the container and gently shake
    to mix all!
  5. Put all back into the skillet, on medium heat.
    DO NOT STIR.!!!!!
    On medium heat, let sit for 10-15 minutes.
    Then flip them over and let them sit again in the skillet on medium heat another 10-15 minutes.
    DO NOT STIR!!!!

  6. Both sides will be nice and crispy brown
    And the aroma is w wonderful.
  7. Serve with bacon and eggs...if you like.
    Enjoy!
