Grandma liked to use up the leftovers! Always believed waste not, want not! This recipe is one that all ages will like. You start with a baked potato, then in a few minutes end up with a dish ..to die for! Potatoes are well done, crispy, and very flavorful. If for breakfast, bacon & eggs go well to serve family. Pssst,any leftover can be use to make a tater soup!. Problem is, never any leftovers! LOL.. Nancy 9/22/13

Ingredients

  • 4 medium baked potatoes (not to soft) .. from day before...or microwave 4 if you are in a hurry.
  • ----- - olive oil....as neded
  • 1/2-3/4 cup chopped finely.....yellow onion
  • ------- pinch garlic powder....optional
  • ------- pinch black pepper, salt, paprika,dried parsley.

How To Make leftover bakers for crispy stove top fried taters

  • Step 1
    Peel and dice a yellow onion.
  • Step 2
    In a skillet, sauté the onion in olive oil, on medium heat.
  • Step 3
    Peel and cut up the baked potatoes (not to soft) into 1/2 to 1 inch cubes. Please not to rough!
  • Step 4
    Now add the onions, potatoes and spices Pour in a couple tablespoons of olive oil. Add your seasonings, you can add some herbs or spices of your choice. Put a lid on the container and gently shake to mix all!
  • Step 5
    Put all back into the skillet, on medium heat. DO NOT STIR.!!!!! On medium heat, let sit for 10-15 minutes. Then flip them over and let them sit again in the skillet on medium heat another 10-15 minutes. DO NOT STIR!!!! .
  • Step 6
    Both sides will be nice and crispy brown And the aroma is w wonderful.
  • Step 7
    Serve with bacon and eggs...if you like. Enjoy!
