Always believed waste not, want not!
This recipe is one that all ages will like.
You start with a baked potato, then in a few minutes end up with a dish ..to die for!
Potatoes are well done, crispy, and very flavorful.
If for breakfast, bacon & eggs go well to serve family.
Pssst,any leftover can be use to make a tater soup!.
Problem is, never any leftovers!

4 mediumbaked potatoes (not to soft) .. from day before...or microwave 4 if you are in a hurry.
-----olive oil....as neded
1/2-3/4 cchopped finely.....yellow onion
------- pinchgarlic powder....optional
------- pinchblack pepper, salt, paprika,dried parsley.
