kim's zucchini squares

This is pretty easy to make, though there are a lot of ingredients. Don't let that scare you away. The squares are tender, and moist and so flavorful with the garlic and the onion and parmesan. I love garlic, so you can even use 2 cloves if you prefer. I have sprinkled extra parmesan over to the top on occasion after they are done baking. I hope this will become one of your favorite appetizers.

Ingredients
- 2 cups thinly sliced zuccini
- 1/4 cup minced onion
- 2 tablespoons parsley
- 1/2 teaspoon oregano
- 3/4 teaspoon salt
- 1 clove garlic minced
- 3/4 cup parmesan or romano
- 4 - beaten eggs
- 1 cup flour
- 1 1/2 teaspoons baking powder
- 1/8 teaspoon black pepper
- 1 tablespoon melted butter
- 1/2 cup vegetable oil
How To Make kim's zucchini squares

Step 1In large bowl mix zucchini, onion, parsley, oregano, salt garlic and cheese. Stir in eggs and mix well.

Step 2Add flour, baking powder, seasoned salt and pepper. Mix well, then add melted butter and oil and mix well.

Step 3Pour into greased 13x9x2 inch casserole dish/pan and bake at 350 for 25 minutes or until golden. Cut in squares. Serve warm or cold. Delicious!
