Ingredients
- 2 pounds string beans, trimmed
- - salt and pepper
- 4 - lg. shallots
- 4 ounces pancetta
- 2 tablespoons butter
- 2 tablespoons olive oil
How To Make kicked up string beans

Step 1Heat large saucepot with salted water to boiling. While water is coming to a boil, fill a large bowl or sink with ice water. Once the water has come to a boil, add beans and cook for 4 minutes.

Step 2Drain beans and place them in ice water.

Step 3In the same pot or very large skillet (whichever works for you) add the olive oil and butter. Add the pancetta to pan and cook until almost crispy. Add the shallots and saute until tender. (the pancetta should be crispy by this time.)

Step 4Drain the beans and add to the shallots and pancetta along with salt and pepper to taste. Cook until the beans are heated through, stirring occasionally.
