I served this as a side or as a whole pie when I had Kay's B.B.Q Restaurant in Rincon, Georgia. It is so good by its self or with any type of meat. It is requested at my church dinners. It's Mmmm good!!!!!

  • 3 to 4 medium
    tomato ( sliced)
  • 1/2 tsp
    salt and pepper
  • 1 tsp
    self-rising flour ( sprinkle over tomato's)
  • 1 c
    fresh spinach
  • 2 c
    mozzarella cheese
  • 1 c
  • 1 bunch
    green onions
  • 1
    deep pie crust

How to Make Kay's Tomato Pie


  1. Preheat Oven to 350o. Bake Pie Crust for 10 minutes at 350o. Take out of oven and set aside.
  2. Slice your Tomato's into thin slices and spread all around in your pie crust. Salt and pepper to taste. Sprinkle 1 Tbsp. of Flour over top of tomato's. Then sprinkle 1 cup of Mozzarella cheese on top of flour mixture.
  3. Mix 1 cup of mayonnaise, 1 cup mozzarella cheese and green onions, diced top and bottom. Spread on top of pie from the inside to the edge. Bake at 350o for 30 minutes. Take out of oven and let set 10 minutes before serving. Enjoy!!!!!
