Just wanted to jazz (hence, the name) up plain old corn. The first time I made it, it was a hit. Now my family ask for the corn with bacon in it every time it's on the menu.

Ingredients

  • 6
    ears of fresh corn, cut off the cob
  • 4 slice
    bacon
  • 1/2 c
    chopped onions
  • 1/2 c
    chopped jalepeno pepper
  • 1/2 c
    butter or margarine
  • ·
    salt and pepper to taste

How to Make Jazzy Corn

Step-by-Step

  1. In a skillet,fry bacon crisp enough to crumble. Reserve bacon drippings.
  2. Saute onion and pepper in bacon fat 2-3 minutes. Add corn and butter. Cook for 25 minutes stirring frequently. Add crumbled bacon last 5 minutes of cooking time.
