How to Make Japanese Cucumber Salad
- 1Peel cucumbers to leave alternating green strips. Slice the cucumber in half lengthwise and scrape the seeds out. Thinly cut the cucumbers into slices. A mandolin works great.
- 2Place the cucumber on a paper towels and press to get most of the moisture out.
- 3Combine the vinegar, salt, and sugar. Pour over cucumbers and toss with sesame seeds.
