Fresh, sweet corn, with fresh jalapeños peppers. You just can't go wrong with this combination. Paprika and BBQ sauce give a nice smokey flavor. Nicely spicey. Want more spice add the jalapeño seeds and membrane. This is the best fried corn recipe I have made.

Ingredients

  • 4 - ears of fresh corn
  • 2 - jalapeno peppers, small-medium ,
  • 1 small jar of pimentos
  • 1 tablespoon bacon drippings
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • 1 tablespoon honey chipotle bbq sauce

How To Make jalapeño fried corn

  • Step 1
    Cut corn off of the cob. Slice jalapeños , remove seeds and membrane, then dice into small pieces.
  • Step 2
    Heat a cast iron skillet to med-high heat . Add bacon drippings heat until hot. Add corn, spread in a single layer. Let cook until you see it start to char.
  • Step 3
    Add salt, pepper, smoked paprika and diced jalapeños. Stir and spread in a single layer, let cook until jalapenos are soft and it starts to char again.
  • Step 4
    Add the jar of pimentos, chili powder and BBQ sauce. Cook until heated.
