I LOVE zucchini and thought this is an excellent option to add to summer BBQs! I usually let my zucchini marinate in the dressing for a little while just to soak up a little more flavor.

    1 large zucchini or 2-3 smaller zucchini
  • ·
    1/4 cup italian-style salad dressing

How to Make Italian Zucchini


  1. Slice zucchini into 1/4 inch slices (or you can do wedges). In a Ziploc style bag, place zucchini and Italian dressing. Toss to coat.
  2. Place on a hot grill and grill about 4 to 5 minutes or until nice grill marks appear and the zucchini is slightly limp. (You can also cook these in the oven at about 400° for about 10 minutes.) Don't overcook them!
