Ingredients

  • 2 large fresh zucchini
  • 4 ounces shittake mushrooms diced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 3 - sweet italian sausage casing removed
  • 1 1/2 cups spaghetti sauce
  • - grated parmesan cheese
  • 1 1/2 cups mozzarella cheese shredded
  • - salt
  • - fresh basil

How To Make italian zucchini boats

  • Step 1
    Slice the skinny necks of the zucchini off and keep for another use. Cut the zucchini's in half and scoup out the seeds with a melon baller. Place on a baking dish and sprinkle with salt.
  • Step 2
    In a large skillet add a little oil and saute the onion, mushrooms and garlic. Sprinkle with salt and cook until softened. Add the sausage and break it up cooking until done. Stir in the spaghetti sauce.
  • Step 3
    Fill each boat with the sausage mixture. Top with parmesan cheese. Bake at 350 degrees for 40 minutes. Add the mozzerella cheese and bake until the cheese is melted and bubbly
  • Step 4
    Top with fresh Basil
