Ingredients
- 3 packages 10-oz. pkgs. frozen lima beans, partially cookedq
- 1 pound hot italian sausage
- 1/2 cup green bell pepper, chopped (or color of your choice)
- 1 cup onion, chopped
- 1/2 cup celery, chopped
- 1 1/2 cups tomato juice
- 1/2 teaspoon salt (optional)
- 2 tablespoons brown sugar
How To Make italian sausage & lima bean casserole

Step 1Heat lima beans in salted water until partially cooked. Place drained lima beans in a 2-qt. casserole dish.

Step 2Separate sausage from casings and cut the sausage into bite-sized pieces. Brown the sausage in a skillet and then drain on paper towels.

Step 3Pour off most of the fat left from the sausage. In remaining fat, saute the onion, green bell pepper and celery.

Step 4Combine the onion mixture with the sausage and pour over the lima beans. Bake at 350 in a covered casserole for 45 minutes to 1 hr.
