Ingredients For italian sausage & lima bean casserole

  • 3 pkg
    10-oz. pkgs. frozen lima beans, partially cookedq
  • 1 lb
    hot italian sausage
  • 1/2 c
    green bell pepper, chopped (or color of your choice)
  • 1 c
    onion, chopped
  • 1/2 c
    celery, chopped
  • 1 1/2 c
    tomato juice
  • 1/2 tsp
    salt (optional)
  • 2 Tbsp
    brown sugar

How To Make italian sausage & lima bean casserole

    Heat lima beans in salted water until partially cooked. Place drained lima beans in a 2-qt. casserole dish.

    Separate sausage from casings and cut the sausage into bite-sized pieces. Brown the sausage in a skillet and then drain on paper towels.

    Pour off most of the fat left from the sausage. In remaining fat, saute the onion, green bell pepper and celery.

    Combine the onion mixture with the sausage and pour over the lima beans. Bake at 350 in a covered casserole for 45 minutes to 1 hr.
