3 Tbspbutter divided

1 cchopped leeks

1 ozdried porcini mushrooms

1 lghead of cauliflower, cut into florets

1 cchicken stock

salt and pepper

2 Tbspcorn starch

2 flhalf and half
-
1 cshredded Gruyere cheese

3 TbspParmesan cheese

fresh parsley, for garnish
How To Make instant pot cheesy cauliflower mushroom side dish

1Place 2 Tbsp butter in Instant Pot. Add the leeks and dried mushrooms and cook 1 minute.

2Add the cauliflower, stock, salt, and pepper. Lock the lid and pressure for 1 minute. Quick release and remove the cauliflower and mushrooms to a baking pan.

3Select sauté. Bring the liquid to a boil.

4In another bowl, pour in the half and half. Sprinkle the corn starch over and whisk until the corn starch is dissolved.

5Pour into the Instant Pot and cook until thickened.

6Turn the heat off. Add the cheese and stir until melted.

7Pour over the cauliflower and mushrooms. Stir.

8Place under the broiler and broil until browned. Garnish with parsley.
