  • 3 Tbsp
    butter divided
  • 1 c
    chopped leeks
  • 1 oz
    dried porcini mushrooms
  • 1 lg
    head of cauliflower, cut into florets
  • 1 c
    chicken stock
  • salt and pepper
  • 2 Tbsp
    corn starch
  • 2 fl
    half and half
  • 1 c
    shredded Gruyere cheese
  • 3 Tbsp
    Parmesan cheese
  • fresh parsley, for garnish

How To Make instant pot cheesy cauliflower mushroom side dish

    Place 2 Tbsp butter in Instant Pot. Add the leeks and dried mushrooms and cook 1 minute.

    Add the cauliflower, stock, salt, and pepper. Lock the lid and pressure for 1 minute. Quick release and remove the cauliflower and mushrooms to a baking pan.

    Select sauté. Bring the liquid to a boil.

    In another bowl, pour in the half and half. Sprinkle the corn starch over and whisk until the corn starch is dissolved.

    Pour into the Instant Pot and cook until thickened.

    Turn the heat off. Add the cheese and stir until melted.

    Pour over the cauliflower and mushrooms. Stir.

    Place under the broiler and broil until browned. Garnish with parsley.
