Ingredients
- 3 tablespoons butter divided
- 1 cup chopped leeks
- 1 ounce dried porcini mushrooms
- 1 large head of cauliflower, cut into florets
- 1 cup chicken stock
- salt and pepper
- 2 tablespoons corn starch
- 2 fluid half and half
- 1 cup shredded Gruyere cheese
- 3 tablespoons Parmesan cheese
- fresh parsley, for garnish
How To Make instant pot cheesy cauliflower mushroom side dish

Step 1Place 2 Tbsp butter in Instant Pot. Add the leeks and dried mushrooms and cook 1 minute.

Step 2Add the cauliflower, stock, salt, and pepper. Lock the lid and pressure for 1 minute. Quick release and remove the cauliflower and mushrooms to a baking pan.

Step 3Select sauté. Bring the liquid to a boil.

Step 4In another bowl, pour in the half and half. Sprinkle the corn starch over and whisk until the corn starch is dissolved.

Step 5Pour into the Instant Pot and cook until thickened.

Step 6Turn the heat off. Add the cheese and stir until melted.

Step 7Pour over the cauliflower and mushrooms. Stir.

Step 8Place under the broiler and broil until browned. Garnish with parsley.
