  • 2 1/2 lb
    plum tomatoes, cut into 1" pieces
  • 8 oz
    fresh mozzarella cheese pearls
  • 1/2 c
    pitted ripe olives
  • 3 Tbsp
    olive oil
  • 1/4 c
    thinly sliced fresh basil
  • 2 tsp
    minced fresh oregeno
  • 1/2 tsp
  • 1/4 tsp
  • ·
    balsamic vinegar, optional

How to Make Insalata Caprese


  1. In a large bowl, mix the tomatoes, mozzarella cheese pearls and olives. Drizzle with olive oil; sprinkle with basil, oregano, salt and pepper and toss to coat. Let stand 10 minutes before serving. If desired, drizzle with balsamic vinegar.
