hotel gurney macaroni salad
Hotel Gurney was a hotel in Yankton, SD owned by the family that started Gurney Seeds. Gurney Seeds is still a mail order seed company but Hotel Gurney hasn't been around for many, MANY years. I found this recipe in a very old cookbook and have added my own twist to it. It is an amazing change from boring old macaroni salad. Sometimes, I like to add black olives and corn just for a different flair. Add your favorite veggies in addition to what's in the recipe. It's hard to mess this recipe up! (I cook up a lot of macaroni at one time, and then save it in a baggie in the fridge. That way I can throw this together quickly or use the pasta for a quick goulash.)

Ingredients
- 1 cup cooked macaroni
- 1/4 cup grated celery (1-2 stalks)
- 1/2 cup grated carrot (about 1 large carrot)
- 2 tablespoons dill pickle relish
- 2 tablespoons onion, finely diced
- 1 clove garlic, minced
- 2 tablespoons mayonnaise
- 2 tablespoons dorothy lynch or french salad dressing
- 1/3 cup cheese, shredded (any kind)
- - salt and pepper, to taste

Step 1Add all ingredients to cooled macaroni. Toss lightly. Serve chilled.
