Ingredients
- 1 pound carrots
- 1 tablespoon olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- 2 cloves garlic,minced
- 1 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/2 teaspoon cracked pepper
- 1/4 cup goat cheese, crumbled
How To Make honey balsamic roasted carrots

Step 1Preheat oven too 425F.

Step 2Cut carrots in half vertically, then slice in 2" segments.

Step 3Whisk together olive oil, balsamic vinegar, honey, garlic, thyme and salt and pepper. Toss carrots with balsamic mixture.

Step 4Spread carrots out onto parchment lined baking sheet (for easier clean up), and roast for 20-25 minutes.

Step 5Crumble goat cheese over carrots and serve.
