Ingredients
- 2 cups grated, raw summer squash
- 2 large eggs, beaten
- 1 cup milk
- 1/4 cup onion, chopped
- 1/4 cup green bell pepper, chopped
- 1 tablespoon sugar
- 1/2 stick butter, sliced into small pieces
- 1 cup cheddar cheese, grated
- 2 cups ritz cracker crumbs

Step 1Preheat oven to 350 degrees. Blend all ingredients except cheese and cracker crumbs. Mix cheese and crumbs together and add about 1/2 to squash mixture. Use remainder to sprinkle on top. Bake in greased casserole dish until mixture sets, about 45 minutes.
