This recipe came to me one very sunny day when it was too hot to cook. Now the whole family enjoys Hermosa Beach salad year-round. In the summer, and on lazy weekends, it's a main dish. Makes a lovely side dish for any occasion. Always a hit at pot lucks and family gatherings. So colorful and delicious; a feast for the eyes and the palate. Enjoy!

Ingredients

  • 1 - lemon
  • 1 - avacado
  • 1 - red bell pepper
  • 1 - sweet onion
  • 1 can kidney beans, canned
  • 1 medium red cabbage head
  • 6 - roma tomatoes
  • 1/2 cup balsamic vinaigrette dressing

How To Make hermosa beach salad

  • Step 1
    Cut avocado into chunks and place in large salad bowl. Juice lemon and pour over avocado. Drain and wash kidney beans and add to bowl. Chop up red bell pepper, red cabbage, tomatoes and sweet onions. Pour balsamic vinaigrette dressing over all ingredients. Mix and serve promptly.
