I love tomatoes, and anything fried. If you have excess tomatoes, and you like fried, try these. Everything comes together quickly. The next time I have good firm, not overly ripe tomatoes, I am going to experiment with trying to bake, so not so many calories. Perhaps spraying broiling pan with cooking spray, would broiling work, or would tomatoes get too brown too quickly. Could still try baking. Anyway, frying is fantastic. Enjoy!!

Ingredients
- - large, ripe firm tomatoes, cut in 1/4" slices
- 1 1/2 - cups crushed herb seasoned stuffing mix
- 1 - egg, beaten
- - olive oil for frying
- 2 tbs - shredded cheddar cheese
How To Make herb fried tomatoes

Step 1Coat tomato slices with stuffing mix, dip in egg & then coat again with stuffing mix.

Step 2Heat oil in heavy skillet.(I prefer cast iron). Add tomato slices, cook until brown, turning once.

Step 3Transfer to serving dish & sprinkle with shredded cheese or grated parmesan.
