  • 1/2 teaspoon salt
  • 2 - eggs
  • 6 tablespoons grated parmesan cheese
  • 1 - garlic clove minced
  • - pepper to taste
  • 4-5 tablespoons butter

  • Step 1
    MIX ZUCCHINI WITH SALT AND LET STAND 15 MIN. SQUEEZE MOISTURE OUT WITH YOUR HANDS.
  • Step 2
    LIGHTLY BEAT THE EGGS. STIR EGGS, CHEESE, GARLIC AND SALT AND PEPPER TO TASTE.
  • Step 3
    MELT BUTTER IN LARGE FRYING PAN, SPOON MIXTURE INTO PAN IN MOUNDS OF 2 TBLS. EACH; FLATTEN SLIGHTLY. (PATTIES SHOULD NOT TOUCH) COOK UNCOVERED, TURNING ONCE, TILL GOLDEN BROWN.
