This recipe was one my grandmother made many years ago and I have modified it for today's eating.

Ingredients

  • 1 can 15 ounce diced beets
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons butter
  • 1/4 cup beet juice from can
  • 1/4 cup apple cider vinegar

How To Make harvard beets

  • Step 1
    Mix sugar and cornstarch; add butter, vinegar and beet juice, boil 5 minutes in a saucepan.
  • Step 2
    Add drained beets, remove from heat; cover and let set for 30 minutes or longer.
  • Step 3
    Reheat and serve.
