This recipe was one my grandmother made many years ago and I have modified it for today's eating.

    15 ounce diced beets
  • 1/2 c
  • 1 Tbsp
  • 2 Tbsp
  • 1/4 c
    beet juice from can
  • 1/4 c
    apple cider vinegar

How to Make Harvard Beets


  1. Mix sugar and cornstarch; add butter, vinegar and beet juice, boil 5 minutes in a saucepan.
  2. Add drained beets, remove from heat; cover and let set for 30 minutes or longer.
  3. Reheat and serve.
