grilled ratatouille
All who know me are aware that I love to grill. This is a recipe I make for myself. My children hate eggplant, zucchini, etc. But I love them. So when they are out of town, I indulge!!

Ingredients
- 2 large vidalia onions, peeled
- 1 medium eggplant
- 3 medium zucchini (about 1 1/2 pounds)
- 2 pounds plum tomatoes
- 1 medium green bell pepper
- 1/4 cup plus 2 tablespoons olive oil, divided
- cooking spray
- 3 cloves garlic, minced
- 3/4 teaspoon fresh thyme, chopped
- salt, to taste
- pepper, to taste
- 2 tablespoons fresh parsley, chopped
How To Make grilled ratatouille

Step 1Cut the onion and eggplant into 1/2 inch slices; set aside. Cut the zucchini and plum tomatoes in half lengthwise; set aside. Quarter the green pepper; set aside. Lightly brush the vegetables with 3 tablespoons olive oil.

Step 2Place eggplant, onion, zucchini, and green pepper on a grill rack coated with cooking spray. Grill, covered, over medium-hot coals (300 to 400º) for about 10 minutes, turning occasionally. Add the plum tomatoes and grill for an additional 2-3 minutes.

Step 3Remove the vegetables from the grill and let cool slightly. Coarsely chop the vegetables and set aside.

Step 4Saute the garlic in the remaining 3 tablespoons oil in a large skillet over medium heat for 1 minute. Add the reserved vegetables and thyme, and saute 10 minutes. Add salt and pepper to taste. Sprinkle with the fresh chopped parsley and serve immediately. Enjoy!!
