My aunt gave me this recipe and it has become one of my favorites,the original recipe uses Velvetta cheese but I don't like that,so I use cheddar or jack.It is so simple and so deliscious! No amounts are needed,just make as much as you want to serve. For a lighter version,you can omit frying the tomatoes and just bake until they're tender.

Ingredients

  • - canola oil
  • - salt and pepper
  • - green tomatoes,sliced thin
  • - your favorite mexican salsa
  • - cheddar cheese, shredded

How To Make green tomato casserole

  • Step 1
    Season tomatoes slices with salt and pepper to taste.Heat a small amount of oil in a skillet ,saute tomatoes until slightly soft. In a oven proof dish,layer tomatoes,spread with salsa and sprinkle with cheese.Make as many layers as you need.Bake 350 degrees until tomatoes are tender ad dish is bubbly.
