Ingredients
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/3 cup cornmeal
- 1 egg
- 1 cup buttermilk
- 2 tablespoons vegetable oil
- 1 cup corn, cooked and drained
- 1/2 cup roasted chilies, chopped
- 1/3 cup fresh cilantro, chopped
- 1/3 cup green onions, chopped
How To Make green chile corn cakes

Step 1Sift flour, baking powder, soda, sugar and salt together. Stir in cornmeal.

Step 2In a separate bowl, lightly beat egg and then add buttermilk, oil, corn, chilies, cilantro and onions.

Step 3Add dry ingredients to egg mixture and stir well.

Step 4Heat griddle or a large skillet over medium-high heat. When hot, add just enough oil to lightly cover and coat the surface. Drop batter by large tablespoonfuls onto griddle or skillet.

Step 5Cook until tiny holes form on each corn cake; then turn and brown on the opposite side.

Step 6Serve with salsa or add a little lime zest & juice to sour cream for a cool zesty dipping sauce.
