green beans with shallots

We love this simple Ina Garten recipe. I prefer using the haricots verts. Enjoy!

Ingredients

  • 1 pound green beans or haricots verts, ends removed
  • - kosher salt, to taste
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 large shallots, large-diced
  • 1/2 teaspoon freshly ground black pepper

How To Make green beans with shallots

  • Step 1
    Blanch the beans in a large pot of boiling, salted water for 1 1/2 minutes only. Drain immediately and immerse in a bowl of ice water.
  • Step 2
    Heat the butter and oil in a large saute pan (12 inch) and saute the shallots on medium heat for 5-10 minutes, tossing occasionally, until lightly browned.
  • Step 3
    Drain the beans and add the shallots with 1/2 t. salt and the pepper, tossing well. Heat only until the beans are hot.
