green beans with mushrooms, balsamic and parmesan
I like this as a side dish when we have grilled steak or a marinated flank steak. The balsamic and Parmesan touch really adds a lot of flavor.

Ingredients
- 1 pound fresh green beans, cut into 2-inch strips
- 8 ounces sliced button mushrooms (brown cremini mushrooms work well, too)
- 1 medium onion, halved and then cut into thin half-rings
- 1 1/2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh basil, chopped
- 2 tablespoons parmesan cheese, finely grated

Step 1Preheat oven to 450°F/230°C.

Step 2Put beans, mushrooms and onion into a large zip-lock bag (or a large mixing bowl).

Step 3Whisk together the olive oil, vinegar, salt and pepper. Pour the dressing over the vegetables and shake bag until vegetables are well coated.

Step 4Arrange vegetables on a large baking sheet, spreading them out so beans and mushrooms aren't too crowded. Roast in oven for 20 to 30 minutes or until beans are tender-crisp and all liquid from the mushrooms has evaporated. Sprinkle chopped basil and grated Parmesan cheese on top, and serve immediately.
