green beans with mushrooms, balsamic and parmesan

I like this as a side dish when we have grilled steak or a marinated flank steak. The balsamic and Parmesan touch really adds a lot of flavor.

Ingredients

  • 1 pound fresh green beans, cut into 2-inch strips
  • 8 ounces sliced button mushrooms (brown cremini mushrooms work well, too)
  • 1 medium onion, halved and then cut into thin half-rings
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh basil, chopped
  • 2 tablespoons parmesan cheese, finely grated

How To Make green beans with mushrooms, balsamic and parmesan

  • Step 1
    Preheat oven to 450°F/230°C.
  • Step 2
    Put beans, mushrooms and onion into a large zip-lock bag (or a large mixing bowl).
  • Step 3
    Whisk together the olive oil, vinegar, salt and pepper. Pour the dressing over the vegetables and shake bag until vegetables are well coated.
  • Step 4
    Arrange vegetables on a large baking sheet, spreading them out so beans and mushrooms aren't too crowded. Roast in oven for 20 to 30 minutes or until beans are tender-crisp and all liquid from the mushrooms has evaporated. Sprinkle chopped basil and grated Parmesan cheese on top, and serve immediately.
