I like this as a side dish when we have grilled steak or a marinated flank steak. The balsamic and Parmesan touch really adds a lot of flavor.

Ingredients

  • 1 lb
fresh green beans, cut into 2-inch strips
  • 8 oz
sliced button mushrooms (brown cremini mushrooms work well, too)
  • 1 medium
onion, halved and then cut into thin half-rings
  • 1 1/2 Tbsp
    olive oil
  • 1 Tbsp
    balsamic vinegar
  • 1 tsp
    salt
  • 1 tsp
    black pepper
  • 1 Tbsp
    fresh basil, chopped
  • 2 Tbsp
    parmesan cheese, finely grated

How to Make Green Beans with Mushrooms, Balsamic and Parmesan

Step-by-Step

  1. Preheat oven to 450°F/230°C.
  2. Put beans, mushrooms and onion into a large zip-lock bag (or a large mixing bowl).
  3. Whisk together the olive oil, vinegar, salt and pepper. Pour the dressing over the vegetables and shake bag until vegetables are well coated.
  4. Arrange vegetables on a large baking sheet, spreading them out so beans and mushrooms aren't too crowded. Roast in oven for 20 to 30 minutes or until beans are tender-crisp and all liquid from the mushrooms has evaporated. Sprinkle chopped basil and grated Parmesan cheese on top, and serve immediately.
