green beans with bacon, cranberries and goat cheese

I made this as a side dish for Christmas dinner, and it was so good. I'm posting the recipe here so it's convenient when I want to make it again. The colors from the green beans and bright red cranberries made this such a great choice for the Christmas dinner table, but it would be a delicious side dish for just about any time of the year.

Ingredients

  • 4 slices bacon, cooked crisp and chopped into small pieces
  • 1 medium shallot, peeled and thinly sliced
  • 1 clove fresh garlic, minced
  • 4 ounces button mushrooms, sliced and coarsely chopped (optional)
  • 1/3 cup dried cranberries
  • 2 pounds fresh green beans, ends trimmed
  • 2 tablespoons water
  • 1/2 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 ounces goat cheese, crumbled

How To Make green beans with bacon, cranberries and goat cheese

  • Step 1
    Cook bacon in a large skillet over medium heat for about 6 to 8 minutes or until crisp. Set cooked bacon aside to cool a bit. When it's cool enough to handle, chop the bacon into small pieces.
  • Step 2
    Drain the excess grease from the skillet. Using the same skillet, cook the shallot, garlic, and mushrooms (if using), stirring occasionally, for about 3 to 4 minutes or until the shallot is soft but not browned.
  • Step 3
    Stir the cranberries, green beans, and water into the shallot mixture. Cover skillet, and cook about 5 to 6 minutes or until the beans are crisp-tender. Remove skillet from heat. Season with salt and pepper.
  • Step 4
    Stir the chopped bacon into the bean mixture until well blended.
  • Step 5
    Transfer the bean mixture to a serving platter. Evenly sprinkle the goat cheese across the top, and serve immediately while the beans are still warm.
