Ingredients

  • 1 lb
    fresh green beans
  • 4 slice
    bacon
  • 1/2 c
    onion, chopped
  • 1/2 c
    celery, chopped
  • 2
    tomatoes, peeled and cut into wedges
  • 1 tsp
    salt
  • 1/2 tsp
    dried oregano leaves
  • 1/8 tsp
    pepper

How to Make Green Beans Provencal

Step-by-Step

  1. Wash beans and remove the strings. Cut the beans into 1 1/2 inch pieces; set aside.
  2. Cook the bacon in a large skillet until crisp; remove bacon, reserving 2 tablespoons drippings in the skillet. Crumble the bacon, and set aside.
  3. Saute onion and celery in drippings until tender, Add the green beansm tomato, salt, oregano, and pepper. Cover and cook over medium heat 8 to 10 minutes or until the beans are tender, Sprinkle with crumbled bacon.
