Ingredients

fresh green beans
4 slice
bacon
1/2 c
onion, chopped
1/2 c
celery, chopped
2
tomatoes, peeled and cut into wedges
1 tsp
salt
1/2 tsp
dried oregano leaves
1/8 tsp
pepper

How to Make Green Beans Provencal

Step-by-Step

  • 1Wash beans and remove the strings. Cut the beans into 1 1/2 inch pieces; set aside.
  • 2Cook the bacon in a large skillet until crisp; remove bacon, reserving 2 tablespoons drippings in the skillet. Crumble the bacon, and set aside.
  • 3Saute onion and celery in drippings until tender, Add the green beansm tomato, salt, oregano, and pepper. Cover and cook over medium heat 8 to 10 minutes or until the beans are tender, Sprinkle with crumbled bacon.
