Colorful side that isn't a ton of work and doesn't take long to prepare. Plus it has one of my favorite ingredients....bacon!

Ingredients

  • 1 pound fresh green beans
  • 4 slices bacon
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 2 - tomatoes, peeled and cut into wedges
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano leaves
  • 1/8 teaspoon pepper

How To Make green beans provencal

  • Step 1
    Wash beans and remove the strings. Cut the beans into 1 1/2 inch pieces; set aside.
  • Step 2
    Cook the bacon in a large skillet until crisp; remove bacon, reserving 2 tablespoons drippings in the skillet. Crumble the bacon, and set aside.
  • Step 3
    Saute onion and celery in drippings until tender, Add the green beansm tomato, salt, oregano, and pepper. Cover and cook over medium heat 8 to 10 minutes or until the beans are tender, Sprinkle with crumbled bacon.
