green beans creole

My Mom used to make this often when I was growing up. It is great as a side dish with anything; but when I was newly married and on a tight budget, I made it with a pound of bacon and doubled the beans for a main dish. We still make it today but the recipe has changed a bit to use fresh ingredients from the garden. I posted the original...feel free to change it up!

Ingredients

  • 6 slices bacon
  • 3/4 cup onions, chopped
  • 1/2 cup green pepper, chopped
  • 2 tablespoons flour
  • 2 tablespoons brown sugar
  • 1 tablespoon worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon dry mustard
  • 16 ounces can peeled tomatoes
  • 1 can green beans, french style

How To Make green beans creole

  • Step 1
    Cook bacon until crisp and remove to paper toweling. Save 3T fat in skillet.
  • Step 2
    Add onion and green pepper and cook until tender. Blend in spices.
  • Step 3
    Add tomatoes with juice. Cook and stir, breaking up tomatoes, until mixture thickens. Add green beans and heat through.
  • Step 4
    Sprinkle with reserved bacon to serve.
