An unusual, but flavorful salad. Always a hit!

Ingredients

  • 14 1/2 ounces can of green beans
  • 1/3 cup chopped sweet onion
  • 1/2 cup vinegar
  • 6 ounces bacon
  • 3 - eggs, hard boiled
  • 3/4 cup mayonnaise (i prefer helman's)
  • 3/4 teaspoon prepared mustard
  • 3/4 teaspoon salt
  • 1 pinch pepper

How To Make green bean & egg salad

  • Step 1
    Place beans in bowl. Add the onion and vinegar. Stir occasionally.
  • Step 2
    Meanwhile, boil the eggs and chop. Set aside.
  • Step 3
    Fry the bacon and crumble. Drain the vinegar from the beans. Add crumbled bacon.
  • Step 4
    In a small bowl, combine the mayonnaise, mustard, salt and pepper. Add to bean mixture and toss to coat.
  • Step 5
    Fold in the boiled, chopped eggs.
  • Step 6
    Cover and refrigerate for at least 1 hour before serving.
