I like to serve vegetable casseroles when I have several people over for dinner as this can be prepared ahead of time which lets me have some time with my friends.

Ingredients

  • 2 pounds green beans,, trimmed
  • 4 slices side bacon cut into 1/4 inch pieces { optional}
  • 3 cloves garlic minced
  • 1 large onion chopped
  • 4 tablespoons butter
  • 1 cup milk
  • 4 tablespoons all purpose flour
  • 1/2 cup half and half
  • 1/8 teaspoon cayenne pepper
  • 1 cup red pepper diced
  • 1 cup grated old cheddar cheese
  • 1 cup panko bread crumbs
  • 1/2 cup grated parmesan cheese

How To Make green bean casserole

  • Step 1
    Blanch green beans drop into boiling water and cook 3 minutes,,remove with slotted spoon and drop into bowl of ice water drain once cool set aside.
  • Step 2
    Add bacon to skillet saute for 3 minutes add onion and garlic and cook 3 to 5 minutes until bacon is done but not too crisp and onions are golden, remove from heat set aside in a bowl..
  • Step 3
    In same skillet melt butter over medium heat, whisk in flour and cook for 2 minutes stirring, pour in milk and cream whisking constantly until thick..add salt and pepper to taste and cayenne pepper and cheddar cheese and diced pepper and cook til cheese melts.
  • Step 4
    Add bacon mixture to pan pour over beans and stir gently top with crumbs and parmesan cheese Bake in 350F oven for 30 minutes or golden,
