I like to serve vegetable casseroles when I have several people over for dinner as this can be prepared ahead of time which lets me have some time with my friends.

Ingredients
- 2 pounds green beans,, trimmed
- 4 slices side bacon cut into 1/4 inch pieces { optional}
- 3 cloves garlic minced
- 1 large onion chopped
- 4 tablespoons butter
- 1 cup milk
- 4 tablespoons all purpose flour
- 1/2 cup half and half
- 1/8 teaspoon cayenne pepper
- 1 cup red pepper diced
- 1 cup grated old cheddar cheese
- 1 cup panko bread crumbs
- 1/2 cup grated parmesan cheese
How To Make green bean casserole

Step 1Blanch green beans drop into boiling water and cook 3 minutes,,remove with slotted spoon and drop into bowl of ice water drain once cool set aside.

Step 2Add bacon to skillet saute for 3 minutes add onion and garlic and cook 3 to 5 minutes until bacon is done but not too crisp and onions are golden, remove from heat set aside in a bowl..

Step 3In same skillet melt butter over medium heat, whisk in flour and cook for 2 minutes stirring, pour in milk and cream whisking constantly until thick..add salt and pepper to taste and cayenne pepper and cheddar cheese and diced pepper and cook til cheese melts.

Step 4Add bacon mixture to pan pour over beans and stir gently top with crumbs and parmesan cheese Bake in 350F oven for 30 minutes or golden,
