  • 2 pounds string beans
  • 2 medium onions, chopped
  • 2 cloves garlic, minced
  • 3/4 cup olive oil, extra virgin
  • 16 ounces tomato sauce
  • 2 teaspoons kosher salt
  • dash freshly ground black pepper
  • - fresh parsley, chopped
  • - fresh mint, chopped
  • 2 large potatoes peeled and quartered
  • 1 cup water
  • 2 medium carrots, sliced, optional
  • 1/4 cup celery, chopped, optional
  • 16 ounces canned white beans, drained,optional

  • Step 1
    Sauté onions and garlic lightly in olive oil. Add tomato sauce, salt and pepper and simmer about 15 minutes. Add remaining ingredients. Cover and cook slowly 1 hour or til tender.
