Ingredients

string beans
2 medium
onions, chopped
2 clove
garlic, minced

olive oil, extra virgin

tomato sauce

kosher salt

freshly ground black pepper
fresh parsley, chopped
fresh mint, chopped

potatoes peeled and quartered
1 c
water
2 medium
carrots, sliced, optional
1/4 c
celery, chopped, optional
16 oz
canned white beans, drained,optional

Step-By-Step

1Sauté onions and garlic lightly in olive oil. Add tomato sauce, salt and pepper and simmer about 15 minutes. Add remaining ingredients. Cover and cook slowly 1 hour or til tender.
