greek green bean cuke & tomato salad

I love a cold green bean salad. I change it up everytime depending on what I have on hand. This is my greek style salad combined with my cucumber tomato salad! Very lite and refreshing!

Ingredients

  • 2 cans 15oz green beans (or 3cups blanched fresh)
  • 15 - cherry tomatoes halved
  • 1 large english cucumber (halved and cut into chunks)
  • 1/4 cup chopped onion
  • 6-8 - greek olives cut in half
  • - s&p
  • 1 cup greek dressing
  • 1/4 cup feta cheese

How To Make greek green bean cuke & tomato salad

  • Step 1
    Prepare and chopped veggies, adding to bowl salting each layer. Toss all together. Shake dressing with feta cheese and pour and toss dressing into veggies. Salt and pepper to taste. Refrigerate for at least 2 hours. The longer it merrys the better!
  • Step 2
    GREEK DRESSING 1c Red wine vinegar 1 1/2c Lite olive oil 1tsp Worcestershire sauce 1tsp sugar 1tsp oregano 2 Minced garlic cloves S&P 4tbls water Shake well and store room temp for 2 days.
