Ingredients
- 3 large onions, coarsely chopped
- 1 cup vegetable stock
- 4 - red pepper, chopped
- 4 - celery ribs, chopped
- 1/2 teaspoon cumin
- 1 teaspoon coriander seeds
- 1 dash cayenne pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 1 can chopped tomatoes, 14 ounces
- 1 - bay leaf
- - salt and pepper to taste
- 2 cans kidney beans, rinsed and drained
- 2 tablespoons bread crumbs
- 2 tablespoons parmesan cheese, grated
How To Make gratin of red beans (new orleans style)

Step 1Preheat oven to 400 degrees F.

Step 2Put the onions in a frying pan with 6 fl or 180 ml of stock.

Step 3Cover and boil for 5 minutes.

Step 4Uncover. Reduce heat somewhat and simmer until amber brown and beginning to stick to the pan.

Step 5Stir in peppers, celery and a splash of stock. Stir and cook until the added vegetables are softened.

Step 6Stir in cumin, coriander, cayenne pepper, thyme, oregano tomatoes, bay leaf, salt, pepper and wine.

Step 7Simmer, stirring occasionally for 20 to 30 minutes until thick and savoury.

Step 8Stir in the beans.

Step 9Spread in a baking dish.

Step 10Sprinkle with a mixture of bread crumbs and grated cheese.

Step 11The recipe can be prepared to this point and refridgerated until needed.

Step 12Bake the beans for 30 minutes uncovered until bubbling and browned on top.
