onions, coarsely chopped
1 c
vegetable stock
red pepper, chopped
celery ribs, chopped
1/2 tsp
1 tsp
coriander seeds
1 dash(es)
cayenne pepper
1/2 tsp
dried thyme
1/4 tsp
dried oregano
1 can(s)
chopped tomatoes, 14 ounces
bay leaf
salt and pepper to taste
2 can(s)
kidney beans, rinsed and drained
2 Tbsp
bread crumbs
2 Tbsp
parmesan cheese, grated

How to Make Gratin Of Red Beans (New Orleans Style)


  • 1Preheat oven to 400 degrees F.
  • 2Put the onions in a frying pan with 6 fl or 180 ml of stock.
  • 3Cover and boil for 5 minutes.
  • 4Uncover. Reduce heat somewhat and simmer until amber brown and beginning to stick to the pan.
  • 5Stir in peppers, celery and a splash of stock. Stir and cook until the added vegetables are softened.
  • 6Stir in cumin, coriander, cayenne pepper, thyme, oregano tomatoes, bay leaf, salt, pepper and wine.
  • 7Simmer, stirring occasionally for 20 to 30 minutes until thick and savoury.
  • 8Stir in the beans.
  • 9Spread in a baking dish.
  • 10Sprinkle with a mixture of bread crumbs and grated cheese.
  • 11The recipe can be prepared to this point and refridgerated until needed.
  • 12Bake the beans for 30 minutes uncovered until bubbling and browned on top.
