Ingredients

  • 3 large
    onions, coarsely chopped
  • 1 c
    vegetable stock
  • 4
    red pepper, chopped
  • 4
    celery ribs, chopped
  • 1/2 tsp
    cumin
  • 1 tsp
    coriander seeds
  • 1 dash(es)
    cayenne pepper
  • 1/2 tsp
    dried thyme
  • 1/4 tsp
    dried oregano
  • 1 can(s)
    chopped tomatoes, 14 ounces
  • 1
    bay leaf
  • ·
    salt and pepper to taste
  • 2 can(s)
    kidney beans, rinsed and drained
  • 2 Tbsp
    bread crumbs
  • 2 Tbsp
    parmesan cheese, grated

How to Make Gratin Of Red Beans (New Orleans Style)

Step-by-Step

  1. Preheat oven to 400 degrees F.
  2. Put the onions in a frying pan with 6 fl or 180 ml of stock.
  3. Cover and boil for 5 minutes.
  4. Uncover. Reduce heat somewhat and simmer until amber brown and beginning to stick to the pan.
  5. Stir in peppers, celery and a splash of stock. Stir and cook until the added vegetables are softened.
  6. Stir in cumin, coriander, cayenne pepper, thyme, oregano tomatoes, bay leaf, salt, pepper and wine.
  7. Simmer, stirring occasionally for 20 to 30 minutes until thick and savoury.
  8. Stir in the beans.
  9. Spread in a baking dish.
  10. Sprinkle with a mixture of bread crumbs and grated cheese.
  11. The recipe can be prepared to this point and refridgerated until needed.
  12. Bake the beans for 30 minutes uncovered until bubbling and browned on top.
