This is a recipe my mother in law uses, handed down from her mother. I can't get enuogh of these when they are part of a meal.

Ingredients

  • 4
    yams
  • 1 c
    orange juice
  • 1 tsp
    orange rind
  • 1/2 c
    white sugar
  • 1/2 c
    brown sugar
  • 1 tsp
    corn starch (rounded)
  • 2 Tbsp
    butter
  • dash(es)
    salt & pepper

How to Make Grandma Brown's Orange Yams

Step-by-Step

  1. Parboil yams in their jackets...Refrigerate over night.
  2. Preheat oven to 350 degrees.
  3. Cut yams into slices lengthwise.
  4. Put in buttered 13x9 baking dish.
  5. In a sauce pan, combine the sugars and cornstarch. Mix until well blended.
  6. Add the orange juice, orange rind, butter, salt and pepper.
  7. Bring to a boil, stirring constantly until clear.
  8. Pour mixture over yams in baking dish.
  9. Bake for 1 hour basting frequently
