This is a recipe my mother in law uses, handed down from her mother. I can't get enuogh of these when they are part of a meal.

Ingredients

  • 4 - yams
  • 1 cup orange juice
  • 1 teaspoon orange rind
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 teaspoon corn starch (rounded)
  • 2 tablespoons butter
  • dash salt & pepper

How To Make grandma brown's orange yams

  • Step 1
    Parboil yams in their jackets...Refrigerate over night.
  • Step 2
    Preheat oven to 350 degrees.
  • Step 3
    Cut yams into slices lengthwise.
  • Step 4
    Put in buttered 13x9 baking dish.
  • Step 5
    In a sauce pan, combine the sugars and cornstarch. Mix until well blended.
  • Step 6
    Add the orange juice, orange rind, butter, salt and pepper.
  • Step 7
    Bring to a boil, stirring constantly until clear.
  • Step 8
    Pour mixture over yams in baking dish.
  • Step 9
    Bake for 1 hour basting frequently
