grandma brown's orange yams
This is a recipe my mother in law uses, handed down from her mother. I can't get enuogh of these when they are part of a meal.

Ingredients
- 4 - yams
- 1 cup orange juice
- 1 teaspoon orange rind
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 teaspoon corn starch (rounded)
- 2 tablespoons butter
- dash salt & pepper
How To Make grandma brown's orange yams

Step 1Parboil yams in their jackets...Refrigerate over night.

Step 2Preheat oven to 350 degrees.

Step 3Cut yams into slices lengthwise.

Step 4Put in buttered 13x9 baking dish.

Step 5In a sauce pan, combine the sugars and cornstarch. Mix until well blended.

Step 6Add the orange juice, orange rind, butter, salt and pepper.

Step 7Bring to a boil, stirring constantly until clear.

Step 8Pour mixture over yams in baking dish.

Step 9Bake for 1 hour basting frequently
