A friend at church gave me this recipe. She often brings this to potlucks and everyone seems to love it, even though its spinach.

  • 2 pkg
    (10 ounces each) frozen spinach, thawed and squeezed very dry
  • 8 oz
    monterey jack cheese, shredded
  • 1 can(s)
    condensed cream of potato soup, undiluted
  • 1 c
    sour cream
  • 1/2 c
    grated parmesan cheese
  • ·
    grated black pepper to taste

How to Make Good and Easy Spinach


  1. Mix all ingredients well and place in a buttered 11 by 7 inch casserole. Bake uncovered at 325 degrees for 25-30 minutes.
