Ingredients
- 1/2 cup apricot preserves
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar, white
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 packages brussels sprouts, trinmmed halved lengthwise
- 1 medium red onion, chopped
- 2 slices bacon, chopped

Step 1Preheat oven to 425*. In large bowl, whisk together apricot preserves, oil, vinegar, garlic powder, salt & pepper. Add Brussels sprouts, onion & bacon; toss until evenly coated.

Step 2Spread vegetable mixture on ungreased baking sheet. Roast until Brussels sprouts are tender and lightly browned, about 20 minutes.
