Ingredients

  • BOK CHOY
  • 1 pound baby bok choy, halved, washed, and drained
  • 2 tablespoons canola oil
  • 1/4 cup red peppers, finely diced
  • 2 1/2 tablespoons ginger, minced
  • 2 cloves (large) garlic, pressed
  • freshly ground mixed peppercorns, to taste
  • 1/4 cup low-sodium vegetable broth
  • SAUCE
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon oyster sauce
  • 1/2 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 tablespoon corn starch
  • 1/4 cup cold water

How To Make ginger garlic bok choy

  • Step 1
    Cut bok choy in half or quarters and transfer to a large bowl filled with cold water. Swish them around to dislodge any dirt or grit; drain them in a colander.
  • Step 2
    In a large skillet over medium heat, add oil, and when shimmering, add red peppers and sauté for 2 minutes.
  • Step 3
    Add ginger and garlic; sauté for 30 seconds.
  • Step 4
    Add bok choy and vegetable broth. Stir to coat, cover and steam for 2 minutes.
  • Step 5
    Meanwhile, mix corn starch with 1/4 cup cold water. In a bowl, combine all the sauce ingredients, including the corn starch mixture; whisk until well-blended.
  • Step 6
    Pour sauce over steamed bok choy, and increase the heat to high; toss.
  • Step 7
    When sauce thickens, spoon over the veggies and serve immediately.
