gigante bean & grilled artichoke salad

I have had a gigante bean salad in italy in a market and was inspired to make some at home. The addition of jarred, grilled artichokes makes it really flavorful and fun with the big ol beans :0)

Ingredients

  • 1 can ( 15 oz) rinsed & drained large butter beans
  • 1 jar (6.5 oz) grilled artichokes with liquid
  • 1/2 cup thinly sliced red onions
  • 1/2 cup diced green onions
  • 1/2 teaspoon bruschetta seasoning mix or italian seasoning
  • 1/8 teaspoon sea salt

How To Make gigante bean & grilled artichoke salad

  • Step 1
    In a large bowl, combine the beans and artichokes with liquid.
  • Step 2
    Add in the red onions and most of the green onions, reserving just a few for serving presentation.
  • Step 3
    Sprinkle with the bruschetta seasoning nd a pinch of the salt.
  • Step 4
    Fold together and toss to distribute seasoning.
  • Step 5
    Cover and refrigerate for about 10 minutes to let flavors blend.
  • Step 6
    Transfer to serving bowl or platter and sprinkle with reserved green onions.
