I used to hate cooked spinach (esp. from a can- yuck!) but wilting fresh spinach with a bit of garlic is a whole different ballgame!

Ingredients

  • 8 ounces baby spinach leaves
  • 2 teaspoons olive oil
  • 2 cloves garlic, minced or thinly sliced
  • 1/2 teaspoon kosher salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 teaspoon butter
  • - lemon juice to serve
  • - salt and pepper, to taste

How To Make garlic sauteed spinach

  • Step 1
    If spinach has not been washed, wash to remove any grit. Pat dry with paper towels.
  • Step 2
    In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned.
  • Step 3
    Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes.
  • Step 4
    Uncover the pot, turn the heat on high, and cook the spinach for another minute. Keep stirring until all the spinach is wilted. Place into a serving bowl and top with the butter, a couple squeezes of lemon, and a sprinkle of sea salt. Serve hot.
