garlic sauteed spinach
I used to hate cooked spinach (esp. from a can- yuck!) but wilting fresh spinach with a bit of garlic is a whole different ballgame!

Ingredients
- 8 ounces baby spinach leaves
- 2 teaspoons olive oil
- 2 cloves garlic, minced or thinly sliced
- 1/2 teaspoon kosher salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1 teaspoon butter
- - lemon juice to serve
- - salt and pepper, to taste
How To Make garlic sauteed spinach

Step 1If spinach has not been washed, wash to remove any grit. Pat dry with paper towels.

Step 2In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned.

Step 3Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes.

Step 4Uncover the pot, turn the heat on high, and cook the spinach for another minute. Keep stirring until all the spinach is wilted. Place into a serving bowl and top with the butter, a couple squeezes of lemon, and a sprinkle of sea salt. Serve hot.
