garlic flash zucchini
When summer zucchini is plentiful, we eat this at least twice a week, and sometimes every night! It is so simple and quick, and very tasty. Even though the prep time says 30 minutes, most of that is just waiting for the zucchini to release some moisture. Time enough to have a nice glass of wine!

Ingredients
- 2 small zucchini
- 1/2 teaspoon salt
- 4 cloves garlic, minced
- 1 tablespoon cooking oil
How To Make garlic flash zucchini

Step 1Slice zucchini to make 3-inch sticks. Place in colander, sprinkle with salt and toss. Let rest no more that 30 minutes, to release some moisture. Blot dry with paper towels.

Step 2Place a large skillet, preferably cast iron, over high heat until a drop of water sizzles, then add oil and swirl until it is very hot and shimmers. Immediately add zucchini all at once.

Step 3Spread zucchini around in a single layer in the hot pan for about 30-60 seconds until you see some browning on the undersides, then add garlic and continuously stir-fry until you see a mixture of golden brown spots and bright green skins, and zucchini is just tender. This should take no more than a minute or two.

Step 4Serve immediately.
