Ingredients

  • 2 packages cauliflower, frozen, thawed (or 1 1/2 lbs fresh)
  • 6 cloves garlic, smashed
  • 2 tablespoons olive oil, extra virgin
  • - salt & pepper, to taste
  • TOPPING:
  • 1 tablespoon olive oil, extra virgin
  • 1 large onion, finely diced
  • 2 cloves garlic, minced
  • 1/3 cup bread crumbs, seasoned
  • 2 tablespoons asiago cheese, grated
  • 1 teaspoon thyme, leaves

How To Make garlic cauliflower w/ toasted asiago bread crumbs

  • Step 1
    Preheat oven to 450 degree F. Place the cauliflower & garlic on a large baking sheet & toss with the oil, salt & pepper. Bake until tender & browned, about 22 - 25 minutes, tossing every 6 - 8 minutes.
  • Step 2
    Meanwhile, heat a medium-sized skillet over medium heat. Add the oil, then the onion & saute about 3 minutes, stirring occasionally. Add the garlic & saute until the onions become golden brown. Reduce heat to low, add breadcrumbs; saute until the breadcrumbs are light golden brown, about 3 - 5 minutes, stirring frequently, careful not to burn. Turn off heat & stir in the thyme. When cool, add asiago cheese.
  • Step 3
    When the cauliflower is ready, remove from oven & top with the toasted bread crumbs.
