Ingredients
- 1 large head cauliflower
- 4 tablespoons olive oil
- 8 cloves garlic minced
- 2 teaspoons salt
- 1 teaspoon each dried basil and oregano
- 1 1/4 cups chicken stock
- 4 tablespoons butter softened
How To Make garlic butter whole roasted cauliflower

Step 1Preheat oven 400 degrees. In a small bowl mix olive oil with salt, garlic and spices. Peel the green bottoms off the cauliflower but leave the core intact. Wash the cauliflower and place in a dutch oven suited for the oven.

Step 2Brush the olive oil mixture all over the cauliflower. Place in pan and pour the chicken stock around the cauliflower. Place a lid on the pan and roast for 30 minutes. Remove the lid and roast another 15 minutes.

Step 3Remove the cauliflower from the pan and brush the butter over the cauliflower letting it melt over the hot veg. Cut into pieces and serve with some of the chicken stock drizzled over top.
