Ingredients
- - 1/2 cup peanut oil, plus more fry frying
- - 1/4 cup chopped garlic
- - 1 pkg. frozen shoestring french fries, 28 oz
- - 2 tsp. salt
- - 1/2 cup chopped fresh parsley
How To Make garlic and parsley shoestring fries

Step 1Put 1/2 cup peanut oil and garlic in small pan over medium heat. Bring to a low boil and simmer for 6 minutes or til garlic is brown and crisp. Remove from heat to cool.

Step 2Pour oil into a large stockpot or Dutch oven, filling halfway. Heat over high heat til candy or deep fry thermometer registers 360 degrees. Carefully add fries, in batches and fry for about 5 minutes or til crisp and brown. Using a slotted spoon, transfer fries to rimmed baking sheet. Drizzle with garlic oil and sprinkle with salt and parsley; toss to coat.Serve at once.
