Summer time is the best time for fresh vegetables. This is a perfect recipe to enjoy those fresh garden vegetables. Great side dish for any meal.

Ingredients

  • 4-6 medium yellow squash
  • 1 large sweet onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 medium tomato, chopped
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon basil
  • 1/2-2/3 cup cheddar cheese, shredded
  • 4 slices bacon, cooked and crumbled

How To Make garden stuffed squash

  • Step 1
    Peheat oven to 400 degrees. Boil squash 8 minutes; cool. When squash is cool enough to handle, cut in half lengthwise and discard seeds.
  • Step 2
    Combine: onions, bell pepper, tomato, salt, pepper, basil and cheddar cheese. Fill each hollowed out squash with mixture. Dot with butter. Top with bacon crumbles.
  • Step 3
    Bake uncovered at 400 degrees for 20 minutes.
