Ingredients

  • 4-6 medium
    yellow squash
  • 1 large
    sweet onion, chopped
  • 1 medium
    green bell pepper, chopped
  • 1 medium
    tomato, chopped
  • 1/2 tsp
    kosher salt
  • 1/4 tsp
    pepper
  • 1/2 tsp
    basil
  • 1/2-2/3 c
    cheddar cheese, shredded
  • 4 slice
    bacon, cooked and crumbled

How to Make Garden Stuffed Squash

Step-by-Step

  1. Peheat oven to 400 degrees. Boil squash 8 minutes; cool. When squash is cool enough to handle, cut in half lengthwise and discard seeds.
  2. Combine: onions, bell pepper, tomato, salt, pepper, basil and cheddar cheese. Fill each hollowed out squash with mixture. Dot with butter. Top with bacon crumbles.
  3. Bake uncovered at 400 degrees for 20 minutes.
