Garden Stuffed Squash

Ingredients

4-6 mediumyellow squash
-
1 largesweet onion, chopped

1 mediumgreen bell pepper, chopped

1 mediumtomato, chopped

1/2 tspkosher salt
-
1/4 tsppepper
-
1/2 tspbasil
-
1/2-2/3 ccheddar cheese, shredded

4 slicebacon, cooked and crumbled
How to Make Garden Stuffed Squash
- Peheat oven to 400 degrees. Boil squash 8 minutes; cool. When squash is cool enough to handle, cut in half lengthwise and discard seeds.
- Combine: onions, bell pepper, tomato, salt, pepper, basil and cheddar cheese. Fill each hollowed out squash with mixture. Dot with butter. Top with bacon crumbles.
- Bake uncovered at 400 degrees for 20 minutes.
