Ingredients
- 4-6 medium yellow squash
- 1 large sweet onion, chopped
- 1 medium green bell pepper, chopped
- 1 medium tomato, chopped
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/2 teaspoon basil
- 1/2-2/3 cup cheddar cheese, shredded
- 4 slices bacon, cooked and crumbled
How To Make garden stuffed squash

Step 1Peheat oven to 400 degrees. Boil squash 8 minutes; cool. When squash is cool enough to handle, cut in half lengthwise and discard seeds.

Step 2Combine: onions, bell pepper, tomato, salt, pepper, basil and cheddar cheese. Fill each hollowed out squash with mixture. Dot with butter. Top with bacon crumbles.

Step 3Bake uncovered at 400 degrees for 20 minutes.
