Ingredients

  • 1 cup yellow squash
  • 1 - zucchini
  • 1 - onion
  • 1 - tomato
  • 1 cup skim mozzarella cheese/grated
  • 1/4 cup feta cheese/crumbled
  • 1/4 cup parmesan cheese (grated)
  • 4 - eggs
  • 1 cup skim milk
  • 2 tablespoons minced basil
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

How To Make garden fritata (diabetic)

  • Step 1
    1. Chop squash, zucchini, and onion and microwave for 9 minutes. 2. Drain 3. Place vegetables in 9X12 greased casserole dish. 4. Top with diced tomato, mozzarella, and feta cheese.
  • Step 2
    5. In mixing bowl, whish eggs, milk, basil, garlic, salt, and pepper. 6. Pour over cheese layer. 7. Sprinkle with parmesan. 8. Bake uncovered at 375 for 45 minutes.
