2 can(s)(20 ounces) sweet potatoes, drained and sliced
1 cpacked brown sugar
2 can(s)(8 ounce) crushed pineapple, drained
3/4 creserved pineapple juice and water
2bananas, not ripe, thickly sliced
How to Make Fruity Sweet Potato Bake
- Put 1/2 of sweet potatoes in a 2 quart casserole.
Mix sugar, salt and cornstarch together well in a saucepan.
- Add pineapple, pineapple juice and butter.
Bring to a boil, stirring often to thicken.
Spread banana slices over potato in casserole.
Pour pineapple mixture over banana.
- Top with remaining potato, making as smooth as possible
Bake covered at 350 degrees for 30 minutes.
- Cover with marshmallows.
Return to oven, uncovered for about 7 minutes until marshmallows are lightly browned.
