Ingredients
- 2 cans (20 ounces) sweet potatoes, drained and sliced
- 1 cup packed brown sugar
- 1-1/2 tablespoon cornstarch
- 1/4 teaspoon salt
- 2 cans (8 ounce) crushed pineapple, drained
- 3/4 cup reserved pineapple juice and water
- 1/4 cup butter
- 2 - bananas, not ripe, thickly sliced
- - mini-marshmallows
How To Make fruity sweet potato bake

Step 1Put 1/2 of sweet potatoes in a 2 quart casserole. Mix sugar, salt and cornstarch together well in a saucepan.

Step 2Add pineapple, pineapple juice and butter. Bring to a boil, stirring often to thicken. Spread banana slices over potato in casserole. Pour pineapple mixture over banana.

Step 3Top with remaining potato, making as smooth as possible Bake covered at 350 degrees for 30 minutes.

Step 4Cover with marshmallows. Return to oven, uncovered for about 7 minutes until marshmallows are lightly browned.
