Ingredients For fruity sweet potato bake

  • 2 can
    (20 ounces) sweet potatoes, drained and sliced
  • 1 c
    packed brown sugar
  • 1-1/2 Tbsp
    cornstarch
  • 1/4 tsp
    salt
  • 2 can
    (8 ounce) crushed pineapple, drained
  • 3/4 c
    reserved pineapple juice and water
  • 1/4 c
    butter
  • 2
    bananas, not ripe, thickly sliced
  • mini-marshmallows

How To Make fruity sweet potato bake

  • 1
    Put 1/2 of sweet potatoes in a 2 quart casserole. Mix sugar, salt and cornstarch together well in a saucepan.

    Add pineapple, pineapple juice and butter. Bring to a boil, stirring often to thicken. Spread banana slices over potato in casserole. Pour pineapple mixture over banana.

    Top with remaining potato, making as smooth as possible Bake covered at 350 degrees for 30 minutes.

    Cover with marshmallows. Return to oven, uncovered for about 7 minutes until marshmallows are lightly browned.
