Ingredients

  • 2 cans (20 ounces) sweet potatoes, drained and sliced
  • 1 cup packed brown sugar
  • 1-1/2 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 2 cans (8 ounce) crushed pineapple, drained
  • 3/4 cup reserved pineapple juice and water
  • 1/4 cup butter
  • 2 - bananas, not ripe, thickly sliced
  • - mini-marshmallows

How To Make fruity sweet potato bake

  • Step 1
    Put 1/2 of sweet potatoes in a 2 quart casserole. Mix sugar, salt and cornstarch together well in a saucepan.
  • Step 2
    Add pineapple, pineapple juice and butter. Bring to a boil, stirring often to thicken. Spread banana slices over potato in casserole. Pour pineapple mixture over banana.
  • Step 3
    Top with remaining potato, making as smooth as possible Bake covered at 350 degrees for 30 minutes.
  • Step 4
    Cover with marshmallows. Return to oven, uncovered for about 7 minutes until marshmallows are lightly browned.
