fried zucchini
My Grammie (Roberta Campbell) used to make this all the time. We always had zucchini growing in the garden. 2 things you could plan on eating was fried zucchini and zucchini bread. When making this recipe it always reminds me of my Gram and how she was always in the kitchen cooking something good. She did not use Panko bread crumbs but her own. I have changed my Grammie's recipe by using the Panko crumbs and adding Parmesan and parsley.
Blue Ribbon Recipe
We could eat plates of these simple fried zucchini chips. The batter is light but crunchy at the same time. Panko gives an extra crunch to the zucchini, too. Pan-frying in just a bit of oil makes the coating super crunchy. Yum!

Ingredients
- 2 - 4 medium fresh zucchini
- 2 large eggs
- 1 - 1 1/2 cups Panko bread crumbs (plain or italian)
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fine chopped parsley
- 1 teaspoon black pepper
- 1/2 teaspoon garlic salt
- for frying: vegetable oil or butter or both
- FOR DIPPING
- 1 cup ranch or blue cheese dressing or marinara
How To Make fried zucchini
Test Kitchen Tips
We found frying these in small batches worked best. If you do that, you'll need to add more oil between batches.

Step 1Slice the zucchini into medium-thick slices. Then place them on a paper towel to absorb some of the moisture.

Step 2Crack the eggs into a bowl and whisk together.

Step 3Add remaining ingredients (except dip) into another bowl and mix together until well blended.

Step 4Take a slice of zucchini and dip into the egg.

Step 5Shake it off gently and then place into the Panko bread crumb mixture and dredge it or take a handful of bread crumb mixture and pat on the top of zucchini until nicely covered.

Step 6Set it on a plate. Repeat until finished.

Step 7Now, heat up a pan on medium heat and add 1 Tbsp olive oil or a pat of butter, whichever you prefer. Wait until it is hot and then place zucchini slices in the pan.

Step 8Fry until nicely browned on each side. It could be from 4 - 7 minutes.

Step 9Take out and place on another plate that has a paper towel on it to absorb any extra oil. Repeat until finished with the slices.
