Ingredients

3/4 lbsquash cubed (2 medium )

1egg beaten
-
1/3 cflour
-
1/3 ccorn meal (add more if needed)
-
1 tspbaking powder
-
1/2 tspsalt
-
1medium onion grated
-
·vegetable oil to fry
How to Make Fried Squash
- Cover squash with salted water cooking for 10-15 minutes till tender. Drain and mash enough to make 1 cup, combine with egg mixing well. Mix flour, cornmeal,baking powder,salt then add to squash. Mix well and add onions. Drop by spoonfuls into hot oil till golden turning once.
