When I fix this there is rarely any left! It is probably not the healthiest way to fix it but you could always use a healthier oil, if you choose to. We could eat our weight in these and always look forward to summer squash crops!! Yummy! You could also make this for an appetizer. I will post a picture as soon as I make them again.

Ingredients For fried squash with cheese

1 - 2 lgsquash or zucchini

1 cflour
-
3-6 slicecheese, your choice (american, cheddar, etc.)

pinchsalt & pepper, to taste

1 cor just enough oil, of your choice, to cover bottom of a skillet
How To Make fried squash with cheese

1Cut your squash or zucchini into approximately 1/4 to 1/2 in. thick slices. I like to put them into a bowl of cold water before flouring them. You can either just flour the slices, or if you prefer more breading, you can dip it in a mixture of egg and milk before flouring. Season to taste when you put them in a skillet. Fry in a skillet for just a couple of minutes, or to however done you prefer. Turn over, place cheese to fit the slice and fry for a couple more minutes. Allow the cheese to melt on top. I always place on a paper towel covered plate to drain excess oil.
