My husband and I decided to try a meet-up for foodies. It was a lot of fun, with some fabulous recipes, lots of food, and people that share an interest -- food! This was one of the recipes made that evening.

Ingredients
- 8 - strips peppered bacon
- BATTER
- 3/4 cup flour
- 1/4 cup stone-ground cornmeal
- 1 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- TOMATOES
- 3 large green tomatoes, sliced 1/4" thick
- 1/4 cup goat cheese crumbles
- 1/4 cup olive oil, plus more, as needed
- PINK CHILI SAUCE
- 1/4 cup thousand island dressing
- 1 teaspoon cajun spice blend or spicy chili powder
- 1 teaspoon jalapeno pepper, chopped
How To Make fried green tomatoes

Step 1In a skillet, cook bacon over medium heat until brown and crisp. Drain on paper towel. Strain the grease into a cup and wipe the skillet with a paper towel.

Step 2While bacon is cooking, combine flour, cornmeal, salt, and pepper in a bowl. Add milk and stir well. The mixture should resemble pancake batter. Add olive oil to the cleaned skillet along with strained bacon grease (optional), and heat over medium.

Step 3Working in batches, dip tomato slices in the batter, letting excess drip back into the bowl. Fry slices in the pan for 3 minutes per side or until golden brown. Add olive oil, as necessary, to complete the tomatoes. Drain tomato slices on paper towels.

Step 4Combine sauce ingredients in a small bowl.

Step 5Chop or crumble the bacon into small pieces. Layer the fried tomatoes, drizzle with pink chili sauce, and top with goat cheese crumbles and bacon.
